1 lb boneless, skinless chicken breast, diced into small pieces

1 cup buttermilk

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1 cup all-purpose flour

1/2 cup shredded Parmesan cheese

1 cup panko breadcrumbs

3 tbsp olive oil

2 cloves garlic, minced

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, mix together the buttermilk, garlic powder, onion powder, paprika, black pepper, and salt. Add the chicken pieces, stirring to thoroughly coat. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for added taste).

    Prepare the Breading: Set up three separate shallow bowls for your breading process. In the first bowl, place the flour. In the second bowl, combine the panko breadcrumbs with the grated Parmesan. In the third bowl, whisk an egg (optional, for added crispiness).

      Coat the Chicken: Take the marinated chicken from the fridge. One piece at a time, first coat a piece of chicken in flour, shaking off any surplus. Then dip it into the egg (if using), and finally, give it a good coating of the panko and Parmesan mixture. Arrange the breaded chicken bites on a plate.

        Preheat the Air Fryer: Prepare your air fryer by preheating it to 400°F (205°C) for about 5 minutes.

          Air Fry the Chicken Bites: Lightly grease the air fryer basket with olive oil to avoid sticking. Arrange the chicken bites in a single layer inside the basket, ensuring they aren't overcrowded. Lightly spray or brush the tops with olive oil. Air fry for 10 minutes, flipping halfway through, until they achieve a golden brown and crispy exterior.

            Sauté the Garlic: While the chicken cooks, heat 1 tbsp of olive oil in a small skillet over medium heat. Add the minced garlic and cook for about 1-2 minutes until it becomes fragrant and lightly golden, being careful not to burn it.

              Toss with Garlic Oil: Once the chicken bites are finished, move them to a large mixing bowl. Pour the sautéed garlic and oil over the chicken, tossing to ensure they are evenly coated.

                Garnish and Serve: Add chopped fresh parsley over the chicken bites for added color and flavor. Serve hot alongside your favorite dipping sauce!
