2 whole wheat or spinach tortillas

1/2 cup fresh spinach leaves, chopped

1/4 cup cherry tomatoes, diced

1 tablespoon olive oil or butter

Salt and pepper to taste

Prepare the Avocado: Scoop the flesh of the avocado into a mixing bowl. Use a fork to mash it gently, leaving it slightly chunky for better texture. Season with a pinch of salt and pepper, and set aside.

    Cook the Eggs: Place a medium-sized skillet over medium heat and add the olive oil or butter. Once hot, crack the eggs into the skillet and sprinkle a bit of salt and pepper over them. Scramble the eggs with a spatula, cooking for about 3-4 minutes until they are fully cooked but still slightly moist.
