Ingredients

6 bone-in, skin-on chicken thighs

1 cup of your favorite BBQ sauce (either homemade or store-bought)

2 large sweet potatoes, peeled and cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To make cleanup a breeze later, line a large baking sheet with parchment paper.

Prepare the Chicken: In a spacious mixing bowl, combine your BBQ sauce with the smoked paprika, garlic powder, onion powder, dried thyme, and a generous sprinkle of salt and pepper. Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated in the flavorful mix.

Prepare the Sweet Potatoes: In a separate bowl, toss the sweet potato cubes with olive oil, a pinch of salt, freshly cracked pepper, and a light dusting of smoked paprika. This will enhance their natural sweetness and add a subtle kick.

Arrange on Baking Sheet: Transfer the coated chicken thighs to one half of the prepared baking sheet, placing them skin-side up. On the opposite half, evenly distribute the seasoned sweet potatoes.

Bake: Place the baking sheet in the preheated oven and bake for approximately 30-35 minutes. You will know the chicken is done when it reaches an internal temperature of 165°F (75°C) and you can easily pierce the sweet potatoes with a fork. For an added touch of crispiness, broil the chicken for an additional 2-3 minutes after baking.

Serve: Once fully cooked, pull the baking sheet from the oven and allow the chicken and sweet potatoes to rest for about 5 minutes. This helps to lock in moisture. Just before serving, sprinkle the dish with freshly chopped parsley for a vibrant finish.

Enjoy: Plate up the zesty baked BBQ chicken thighs alongside the sweet potatoes for a delightful and hearty meal that’s sure to please everyone at the table!
