1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 cup chopped walnuts or pecans (optional)

2 tablespoons honey

1 tablespoon unsalted butter, melted

1 teaspoon vanilla extract

1 sheet of puff pastry (thawed if frozen)

Fresh rosemary or thyme sprigs for garnish

Flaky sea salt (for topping)

Preheat the Oven: Set your oven to 375°F (190°C) and allow it to preheat while you prepare the other ingredients.

    Prepare the Puff Pastry: On a lightly floured surface, gently roll out the puff pastry. Ensure it is large enough to fully encase the Brie. If using a previously frozen sheet, simply unfold it carefully.

      Make the Apple Filling: In a medium mixing bowl, combine the thinly sliced apples, brown sugar, ground cinnamon, chopped walnuts or pecans (if using), honey, melted butter, and vanilla extract. Mix thoroughly until the apples are evenly coated with the sweet, spiced mixture.

        Prepare the Brie: Position the Brie cheese in the center of the puff pastry. Generously spoon the apple filling over the top, making sure to cover the cheese evenly.
