Cheesy BBQ Chicken Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded (rotisserie chicken works wonderfully)

1 cup barbecue sauce (choose your favorite brand for optimal flavor)

1 cup corn (canned or frozen; if canned, drain before use)

1 cup black beans (canned, rinsed and drained)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese

½ cup cream cheese, softened to room temperature

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's ready for baking.

    Prepare the Peppers: Carefully cut the tops off the bell peppers and remove the seeds and membranes thoroughly. Lightly brush the exterior of each pepper with olive oil to enhance flavor and avoid sticking. Place the peppers upright in a baking dish, with the cut side facing up.

      Mix the Filling: In a large mixing bowl, combine the shredded chicken, barbecue sauce, corn, black beans, garlic powder, onion powder, salt, and pepper. Add the softened cream cheese and ½ cup of cheddar cheese to the bowl. Stir the mixture well until all ingredients are evenly blended and coated in the BBQ sauce.

        Stuff the Peppers: Using a generous spoon, stuff each bell pepper with the chicken and BBQ mixture, packing it down to ensure they're filled to the top.

          Top with Cheese: Sprinkle the remaining ½ cup of cheddar cheese evenly over the tops of the stuffed peppers for an extra cheesy finish.
