Ingredients

1 lb ground turkey

2 cups broccoli florets (fresh or frozen)

1 cup uncooked brown rice

2 ½ cups chicken broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

½ cup cream of mushroom soup (optional, for extra creaminess)

½ cup breadcrumbs (optional for topping, add for crunch)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Turkey:

      - In a large skillet, heat the olive oil over medium heat.

        - Once hot, add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent.

          - Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

            - Introduce the ground turkey into the skillet, breaking it apart with a spatula as it cooks.

              - Season the mixture with dried thyme, paprika, salt, and pepper. Cook until the turkey is browned and cooked through, approximately 6-8 minutes.

                Prepare the Rice:

                  - Meanwhile, in a separate pot, bring the chicken broth to a rolling boil.

                    - Stir in the uncooked brown rice, then reduce the heat to low. Cover and let it simmer for about 35-40 minutes, or until the rice is tender and has absorbed most of the liquid.

                      Combine Ingredients:

                        - In a large mixing bowl, blend the cooked turkey mixture with the cooked rice once both are ready.

                          - Gently fold in the broccoli florets, followed by both types of cheese (set aside some cheese for topping if desired).

                            - If you opted for extra creaminess, stir in the cream of mushroom soup at this stage.

                              Transfer to Casserole Dish:

                                - Pour the combined mixture into a greased 9x13 inch casserole dish.

                                  - Spread it out evenly and top with the reserved shredded cheese.

                                    - For an added layer of texture, sprinkle breadcrumbs on top.

                                      Bake:

                                        - Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for about 25 minutes.

                                          - Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.

                                            Serve:

                                              - Allow the casserole to cool for a few minutes before serving. Enjoy your comforting and cheesy turkey and broccoli rice casserole warm!
