Ingredients

1 lb ground turkey

1 cup fresh spinach, finely chopped

1/2 cup Italian-seasoned breadcrumbs (or plain breadcrumbs)

1/4 cup freshly grated Parmesan cheese

1/4 cup shredded mozzarella cheese, plus additional for topping

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

1 can (15 oz) crushed tomatoes

1 teaspoon red pepper flakes (optional, for added heat)

Fresh basil leaves, for garnish

Instructions

Prepare the Meatball Mixture: In a spacious mixing bowl, combine the ground turkey, finely chopped spinach, breadcrumbs, Parmesan cheese, 1/4 cup of mozzarella cheese, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Use your hands to gently mix until all ingredients are evenly incorporated.

Form Meatballs: Take small portions of the mixture and shape them into meatballs, roughly 1 inch in diameter. You should be able to yield about 16 meatballs.

Cook the Meatballs: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the meatballs into the skillet. Cook for approximately 5-7 minutes, turning them occasionally to ensure they achieve a golden brown color on all sides and are cooked through.

Prepare the Sauce: After the meatballs are cooked, remove them from the skillet and set them aside on a plate. In the same skillet, add the crushed tomatoes, stirring occasionally to blend with the leftover juices. For those who enjoy a bit of spice, sprinkle in the red pepper flakes at this point. Allow the sauce to simmer for about 2-3 minutes.

Combine and Simmer: Return the meatballs to the skillet, gently placing them into the sauce. Cover the skillet and let everything simmer for around 5 minutes so that the flavors can meld together beautifully.

Add the Cheese: Sprinkle the remaining mozzarella cheese over the meatballs and sauce. Cover the skillet once more and cook for an additional 2-3 minutes, until the cheese is melted and bubbling.

Serve: Remove the skillet from the heat and finish with a garnish of fresh basil leaves. Serve this delicious dish hot, either over pasta or rice, or enjoy it on its own!
