Classic Beef & Bean Burritos

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and freshly ground black pepper to taste

½ cup beef broth (or water)

1 cup shredded sharp cheddar cheese

4 large flour tortillas (10 inches)

½ cup salsa (optional)

Sour cream for serving (optional)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Beef: Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until it is fully browned, approximately 5-7 minutes. Drain any excess fat from the skillet to keep the burrito filling light.

    Sauté Onions and Garlic: Add the finely diced onion and minced garlic to the skillet with the beef. Sauté for about 2-3 minutes, stirring frequently, until the onion becomes soft and translucent.

      Season the Filling: Sprinkle in the chili powder, ground cumin, smoked paprika, and a pinch of salt and pepper. Stir well to coat the beef and onions with the spices, ensuring an even distribution of flavor.

        Incorporate Black Beans and Broth: Gently fold the rinsed black beans into the skillet. Then pour in the beef broth (or water) and stir to combine all ingredients. Allow the mixture to simmer for 5 minutes, stirring occasionally, until warmed through and the flavors meld beautifully. Taste and adjust seasoning as needed.

          Assemble the Tortillas: On a clean surface, lay a tortilla flat. Spoon about 1/4 cup of the beef and bean mixture onto the center of the tortilla. Top it off with a sprinkle of shredded cheddar cheese and a spoonful of salsa if you wish.

            Roll the Burrito: Carefully fold the sides of the tortilla over the filling. Starting from the bottom, tightly roll the tortilla upwards to encase the filling, tucking in the sides as you go. Repeat this process with the remaining tortillas and filling.

              Crisp the Burritos (Optional): For a crispy exterior, heat a clean skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side until golden and crispy.

                Serve: Once cooked, remove the burritos from the skillet and slice them in half to showcase the delicious filling. Garnish with freshly chopped cilantro. Serve alongside sour cream and additional salsa for dipping.
