Ingredients

2 cups cooked chicken, shredded or diced

3 cups broccoli florets (fresh or frozen)

1 cup cooked rice (white or brown)

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 can (10.5 oz) cream of chicken soup

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons butter, melted (for breadcrumb topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

Prepare the Broccoli: If using fresh broccoli, bring a pot of water to a boil. Add the florets and blanch them for about 3-4 minutes until they turn bright green and are slightly tender. Drain the broccoli and set aside. If using frozen broccoli, simply thaw it in the microwave or let it come to room temperature.

Combine Ingredients: In a large mixing bowl, combine the shredded chicken, cooked rice, and the prepared broccoli florets. Mix them gently until evenly distributed.

Make the Creamy Sauce: In a separate medium-sized bowl, whisk together the cream of chicken soup, milk, garlic powder, onion powder, paprika, and a pinch of salt and pepper until the mixture is smooth and well combined. This will be the sauce that brings the dish together.

Incorporate the Sauce: Pour the creamy sauce over the chicken, rice, and broccoli mixture in the large bowl. Stir well to ensure that all ingredients are evenly coated with the sauce.

Cheese it Up: Add the shredded cheddar and mozzarella cheese to the chicken and vegetable mixture, mixing gently. Reserve a small handful of cheese to sprinkle on top later for a deliciously cheesy finish.

Prepare for Baking: Grease a 9x13 inch (or similar size) baking dish with cooking spray or butter. Transfer the chicken and broccoli mixture into the baking dish, spreading it out evenly with a spatula.

Topping Preparation: In a small bowl, combine the breadcrumbs with the melted butter, stirring until the breadcrumbs are evenly coated. Sprinkle this breadcrumb mixture evenly over the casserole. Then, add a sprinkle of the reserved cheese on top for an extra gooey layer.

Bake the Casserole: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is bubbly and golden brown. The aroma will fill your kitchen!

Cool and Serve: Once baked, remove the casserole from the oven and allow it to cool for about 5 minutes before serving. This resting time helps the flavors meld and the dish to set slightly.

Enjoy: Serve warm, enjoying the comforting blend of cheesy, creamy, and hearty flavors with your family or friends!
