Ingredients

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups fresh broccoli florets, washed

1 cup heavy cream, at room temperature

1 cup low-sodium chicken broth

1 cup shredded sharp cheddar cheese

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 medium onion, chopped finely

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a hint of heat

Fresh parsley, finely chopped (for garnishing)

Instructions

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced chicken. Season generously with salt and pepper. Cook, stirring occasionally, for about 6-7 minutes, or until the chicken is golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside on a plate.

Sauté the Vegetables: Using the same skillet, add the chopped onion and minced garlic. Sauté for approximately 2-3 minutes until the onions become translucent and fragrant. Then, add the broccoli florets and cook for an additional 4-5 minutes, stirring occasionally, until the broccoli is bright green and slightly tender but still crisp.

Make it Creamy: Pour the chicken broth into the skillet and bring the mixture to a gentle simmer. Once simmering, lower the heat and carefully stir in the heavy cream, Italian seasoning, and optional red pepper flakes. Let it simmer for another 2-3 minutes, allowing the flavors to meld together.

Combine Everything: Return the cooked chicken to the skillet, stirring to combine with the creamy sauce and broccoli. Sprinkle the shredded cheddar cheese evenly over the top, stirring gently until the cheese is fully melted and brings everything together in a creamy, luscious sauce.

Season and Serve: Taste the dish and adjust the seasoning with additional salt and pepper if necessary. Once satisfied with the flavors, remove from heat, garnish with freshly chopped parsley, and serve immediately while hot.
