8 oz (225g) pasta (fettuccine or penne)

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta of your choice and cook according to the package instructions until it's al dente. Once done, drain the pasta and set it aside, making sure to reserve 1/2 cup of the pasta water for later use.

    Sauté the Chicken: In a large skillet placed over medium heat, pour in the olive oil. Once heated, add the bite-sized chicken pieces. Season with salt, pepper, and Italian seasoning to enhance the flavor. Cook the chicken for about 6-8 minutes, stirring occasionally, until the pieces are golden brown and fully cooked through. Once done, remove the chicken from the skillet and place it aside on a plate.

      Prepare the Spinach and Garlic: Using the same skillet, add a splash more olive oil if necessary, then add the minced garlic. Sauté for around 30 seconds or until the garlic becomes fragrant. Next, toss in the chopped spinach and sauté it for about 2-3 minutes, stirring frequently, until it wilts down.

        Make the Creamy Sauce: Reduce the heat to low, and pour in the chicken broth along with the heavy cream. Stir these two ingredients together until well combined. Let the mixture simmer for about 3-4 minutes so that it thickens slightly. Gradually stir in the grated Parmesan cheese, allowing it to melt into the sauce and create a creamy texture.

          Combine Everything: Return the cooked chicken to the skillet, followed by the drained pasta. Gently toss everything together to ensure the pasta and chicken are well coated in the creamy sauce. If the sauce seems too thick, gradually add some of the reserved pasta water until you achieve your desired consistency.
