1 lb boneless, skinless chicken breasts

1 cup wild rice, rinsed and drained

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1/2 cup frozen peas (optional)

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp paprika

6 cups chicken broth

1 cup heavy cream

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken breasts and sear them for approximately 5-7 minutes on each side, or until they are fully cooked and golden brown. Once cooked, remove the chicken from the pot and let it cool on a cutting board. When cool enough to handle, shred the chicken using two forks and set it aside.

    Sauté the Vegetables: In the same pot, add the finely chopped onion, diced carrots, and diced celery. Sauté the vegetables for about 5-7 minutes until they soften and become fragrant. Stir in the minced garlic, dried thyme, dried rosemary, and paprika; continue to cook for an additional 1-2 minutes, letting the aromas blend.

      Combine Ingredients: Incorporate the rinsed wild rice into the pot, followed by the chicken broth. Increase the heat to high and bring the mixture to a boil. After boiling, reduce the heat to low, cover, and let it simmer for about 45 minutes, or until the wild rice is tender and fully cooked.
