Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

1 cup fresh spinach leaves, thoroughly washed

4 cloves garlic, finely minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon unsalted butter

1 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper to taste

Fresh parsley, roughly chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, add water and season generously with salt. Bring to a boil and add the fettuccine. Cook according to the package instructions until al dente, typically about 8-10 minutes. Before draining, reserve ½ cup of the pasta cooking water. Drain the pasta and set it aside.

Sauté the Shrimp: Heat a large skillet over medium heat and add the olive oil and butter. Once the butter is melted and bubbling, incorporate the minced garlic and sauté for about 1 minute, or until fragrant. Add the peeled and deveined shrimp to the skillet, seasoning them with salt, pepper, and red pepper flakes if using. Cook the shrimp for 2-3 minutes on each side, or until they are a vibrant pink and opaque. Remove the shrimp from the skillet and set aside, keeping them warm.

Prepare the Sauce: In the same skillet where you cooked the shrimp, pour in the heavy cream. Allow it to come to a gentle simmer, stirring occasionally. Gradually add the freshly grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce is smooth and creamy. If the sauce appears too thick, slowly stir in some of the reserved pasta water until you reach a silky consistency.

Combine Ingredients: Add the fresh spinach leaves into the creamy sauce, cooking for an additional 2-3 minutes, or until the spinach is wilted and tender. Return the cooked shrimp to the skillet, gently folding them into the sauce to coat thoroughly.

Mix with Pasta: Add the drained fettuccine into the skillet and toss everything together, ensuring the pasta is well-coated with the creamy sauce. Taste and adjust the seasoning with additional salt and pepper as needed.

Serve: Plate generous portions of the creamy garlic shrimp and spinach pasta, finishing each plate with a sprinkle of chopped fresh parsley for a burst of color and freshness. Enjoy your delightful dish!
