Crispy Cherry Sorbet

3 cups fresh cherries, pitted and halved

1 cup water

3/4 cup granulated sugar

1 tablespoon freshly squeezed lemon juice

1 tablespoon cornstarch

Pinch of salt

1/2 cup crushed ice (to enhance texture)

Prepare the Cherries: In a medium saucepan, combine the halved and pitted cherries, water, and granulated sugar. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar is fully dissolved and the cherries soften, which should take about 5-7 minutes. Remove the saucepan from the heat and allow the mixture to cool slightly.

    Blend the Mixture: Once the cherry mixture has cooled to a warm temperature, transfer it to a blender or food processor. Add the freshly squeezed lemon juice, cornstarch, a pinch of salt, and almond extract (if you're using it). Blend the mixture until it is completely smooth.

      Strain the Mixture: For an extra smooth texture, pour the blended mixture through a fine mesh sieve into a clean bowl, pressing gently with a spatula to extract as much liquid as possible and discarding any solid remnants.

        Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate the cherry mixture for a minimum of 2 hours, or until it is thoroughly chilled.

          Freeze the Sorbet: Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer's guidelines until it reaches a soft-serve consistency, generally about 20-25 minutes.

            Incorporate the Crispy Element: During the last few minutes of churning, slowly add the crushed ice to the mixture. This step will create a refreshing crispy texture, enhancing your sorbet without altering its delicious flavor.

              Transfer and Freeze: Carefully transfer the sorbet to an airtight container and place it in the freezer for at least 4 hours, or until it firms up completely.

                Serve: When you're ready to indulge, scoop the sorbet into bowls or cones. Consider garnishing with fresh cherry halves or a light sprinkle of crushed ice on top for an added crunch and visual appeal.
