1 lb fresh white fish fillets (such as cod, haddock, or pollock)

1 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 cup Panko breadcrumbs (for an extra crunchy texture)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Cooking spray or 2 tablespoons olive oil

Lemon wedges, for serving

Tartar sauce or your favorite dipping sauce, for serving

Instructions
 

Preheat the Oven:

    - Set your oven temperature to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper and lightly greasing the surface with cooking spray or olive oil.

      Prepare the Fish:

        - Using paper towels, pat the fish fillets dry to remove excess moisture. Cut the fish into evenly sized stick portions, aiming for each piece to be approximately 1 inch wide and 4 inches long. Season the fish sticks with salt and pepper to enhance their flavor.

          Set Up the Breading Station:

            - Arrange three shallow dishes on your workspace.

              - In the first dish, pour the flour, spreading it evenly.

                - In the second dish, whisk together the eggs and Dijon mustard until thoroughly combined and smooth.

                  - In the third dish, mix the Panko breadcrumbs with garlic powder, onion powder, paprika, and a pinch of salt and pepper.

                    Bread the Fish Sticks:

                      - Take each fish stick and first dredge it in the flour, ensuring to shake off any excess coating.

                        - Dip the floured stick into the egg mixture, making sure it is fully coated.
