Crockpot Goulash

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 cups uncooked elbow macaroni

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth (or vegetable broth for a vegetarian twist)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

2 teaspoons Italian seasoning

1 teaspoon paprika

Salt and freshly ground black pepper to taste

1 cup shredded cheddar cheese (optional, for serving)

Fresh parsley, chopped (optional, for garnish)

Brown the Meat: In a skillet set over medium heat, add the ground beef. Cook until browned and no longer pink, about 5-7 minutes, breaking it apart with a spatula as it cooks. Drain off any excess fat, then transfer the browned meat into your Crockpot.

    Sauté Vegetables: In the same skillet, add the diced onion, minced garlic, and chopped red and green bell peppers. Sauté these vegetables for about 3-4 minutes, or until they start to soften and onions become translucent. Once done, add the sautéed vegetables to the Crockpot.
