4 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

1 cup carrots, freshly grated

1 cup red bell pepper, thinly sliced

1 cup snap peas, trimmed and cut in half

1/2 cup green onions, thinly sliced

1/4 cup fresh cilantro, coarsely chopped

1/4 cup roasted peanuts, roughly chopped (for garnish)

For the Peanut Dressing:

1/4 cup creamy peanut butter

2 tablespoons low-sodium soy sauce

2 tablespoons rice vinegar

1 tablespoon fresh lime juice

1 tablespoon honey or maple syrup (if making vegan, use maple syrup)

1 teaspoon toasted sesame oil

1 clove garlic, finely minced

1 teaspoon freshly grated ginger

2-3 tablespoons warm water (to adjust dressing consistency)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, grated carrots, thinly sliced red bell pepper, halved snap peas, sliced green onions, and chopped cilantro. Gently toss these ingredients until they are evenly mixed.

    Make the Dressing: In a separate bowl, add the creamy peanut butter, soy sauce, rice vinegar, lime juice, honey or maple syrup, sesame oil, minced garlic, and grated ginger. Whisk these ingredients together until you achieve a smooth, cohesive dressing. If the mixture appears thick, gradually pour in warm water one tablespoon at a time until you reach your desired dressing consistency.

      Combine: Drizzle the peanut dressing over the slaw mixture. Carefully toss the vegetables and dressing together using tongs or salad forks until all the veggies are well-coated in the dressing.

        Garnish and Serve: Sprinkle the chopped peanuts over the slaw for an added crunch.
