1 lb ground beef (80% lean)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (your choice of red or green), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, including juice

2 tablespoons tomato paste

2 cups beef broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, sliced jalapeños

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced onion and bell pepper, cooking for about 4-5 minutes until they are softened. Stir in the minced garlic and continue cooking for an additional minute, or until the garlic becomes fragrant.

    Brown the Beef: Increase the heat to medium-high. Add the ground beef to the pot, breaking it apart with a wooden spoon as it cooks. Cook until the beef is fully browned, about 5-7 minutes. If there’s any excess fat, drain it off.

      Incorporate the Beans and Tomatoes: Add the drained and rinsed kidney beans and black beans to the pot, followed by the diced tomatoes (with their juice) and the tomato paste. Mix all the ingredients thoroughly.
