Ingredients

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 teaspoon Dijon mustard

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

1 tablespoon Worcestershire sauce

Salt and pepper to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: Begin by bringing a large pot of salted water to a rolling boil. Add the egg noodles and cook according to the package instructions until they are al dente. Once cooked, drain well and set aside.

Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. When the oil is shimmering, add the thinly sliced beef sirloin in batches, ensuring not to overcrowd the skillet. Sauté for about 3-4 minutes, or until the beef is browned on all sides. Remove the beef from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the chopped onion and sauté for about 2-3 minutes until it becomes translucent and soft. Next, add the minced garlic and sliced mushrooms, stirring frequently. Cook until the mushrooms are tender and have released their juices, approximately 4-5 minutes.

Prepare the Sauce: Sprinkle the flour over the mushroom mixture, stirring well to combine. Allow it to cook for an additional minute, then gradually whisk in the beef broth until smooth. Bring the mixture to a gentle simmer, stirring continuously until the sauce thickens, which should take around 3-4 minutes.

Combine Everything: Reduce the heat to low and stir in the Dijon mustard, Worcestershire sauce, and sour cream. Mix thoroughly until everything is well incorporated. Return the cooked beef to the skillet, warming it in the sauce for about 2 minutes. Season with salt and freshly cracked pepper to taste.

Serve: To serve, place a generous mound of egg noodles on each plate, then ladle the beef stroganoff mixture over the top. Garnish with freshly chopped parsley to add a pop of color and enhance the dish's flavor profile.
