Easy Chicken Fajita Quesadillas for Families

2 boneless, skinless chicken breasts (approximately 1 lb), thinly sliced

1 tablespoon olive oil

1 medium yellow onion, thinly sliced

1 bell pepper (red or yellow), thinly sliced

1 tablespoon fajita seasoning (use store-bought or homemade for convenience)

1 cup shredded cheese (choose cheddar, Monterey Jack, or your favorite blend)

4 large flour tortillas

Salt and pepper, to taste

Sour cream and salsa, for serving

Fresh cilantro, chopped (optional, for garnish)

Prepare the Chicken: In a medium bowl, combine the thinly sliced chicken breasts with olive oil, fajita seasoning, salt, and pepper. Toss well to ensure all pieces are evenly coated.

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally until the chicken is fully cooked through and has developed a golden brown color. Once done, remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet (without cleaning it), add the sliced onions and bell peppers. Sauté for about 3-4 minutes, or until the vegetables are tender and lightly charred, stirring occasionally.

        Combine Chicken and Vegetables: Return the cooked chicken back to the skillet with the sautéed vegetables. Stir everything together and heat through for an additional 2 minutes. Remove the skillet from heat once everything is evenly warmed.

          Prepare Quesadillas: Heat a separate skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle half of it with shredded cheese. Next, add half of the chicken and vegetable mixture on top of the cheese, and then sprinkle with an additional layer of cheese. Fold the tortilla in half to cover the filling.

            Cook Quesadilla: Cook the folded quesadilla for about 2-3 minutes on each side, or until it is golden brown and the cheese inside is melted. Remove from the skillet and keep warm. Repeat this process with the remaining tortillas.

              Serve: Cut each quesadilla into wedges and serve while warm. Accompany with dollops of sour cream, a generous serving of salsa, and garnish with fresh chopped cilantro for an extra burst of flavor.
