Family-Friendly Crockpot Chili Mac: Comfort in a Bowl All Season

Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper, chopped (any color)

1 can (15 oz) diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

2 cups beef or vegetable broth

2 tbsp chili powder

1 tsp cumin

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

3 cups elbow macaroni (uncooked)

2 cups shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a skillet over medium heat, cook the ground beef (or turkey) until browned and fully cooked. Drain off any excess fat.

    Add the chopped onion, minced garlic, and bell pepper to the skillet and sauté for around 5 minutes until the vegetables soften.

      Move the meat and vegetable combination into the crockpot.

        Mix in the diced tomatoes, kidney beans, black beans, beef (or vegetable) broth, chili powder, cumin, paprika, salt, and black pepper until everything is well incorporated.

          Cover the crockpot and set it to cook on low for 6 hours, or high for 3 hours.

            After the cooking period, incorporate the uncooked elbow macaroni into the crockpot, stirring gently. Cover again and cook on high for another 30 minutes, or until the pasta reaches the desired tenderness.

              Once the pasta is cooked to your preference, mix in the shredded cheddar cheese until it melts and becomes creamy.

                Serve warm, with fresh cilantro or parsley as a garnish if you wish. Enjoy your comforting bowl of chili mac!
