8 oz (226g) cream cheese, softened to room temperature

1/2 cup (100g) granulated sugar

1/2 cup (120ml) sour cream

1/2 tsp vanilla extract

1 tsp ground cinnamon

1 large egg

For the Churro Coating:

1 cup (120g) all-purpose flour

1/4 cup (50g) granulated sugar

2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup (120ml) milk

2 tbsp (28g) unsalted butter, melted

1 tsp vanilla extract

For the Cinnamon Sugar Topping:

1/2 cup (100g) granulated sugar

2 tsp ground cinnamon

1/4 cup (60ml) unsalted butter, melted (for coating)

Instructions
 

Prepare the Cheesecake Filling:

    - In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it’s smooth and creamy.

      - Add the granulated sugar, sour cream, vanilla extract, ground cinnamon, and the egg. Beat the mixture until all ingredients are well combined and the mixture is light and fluffy.

        - Pour the cheesecake filling into a lined muffin tin with a 12-cup capacity, filling each cup about 2/3 full.

          Freeze the Cheesecake Filling:

            - Place the muffin tin in the freezer for about 2-3 hours, or until the cheesecake filling is completely frozen solid.

              Make the Churro Coating:

                - In a separate mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Mix well to ensure even distribution of the dry ingredients.

                  - In another bowl, whisk together the milk, melted unsalted butter, and vanilla extract until fully combined.

                    - Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined. Avoid overmixing; the batter should retain a slightly lumpy texture.

                      Prepare the Cinnamon Sugar:

                        - In a small bowl, mix together the granulated sugar and ground cinnamon for the topping. Set this mixture aside for later use.

                          Deep Frying:

                            - Heat about 3 inches of vegetable oil in a deep pot to 350°F (175°C).

                              - Once the cheesecake bites are frozen solid, carefully dip each one into the churro batter to coat them completely.

                                - Gently lower the coated bites into the hot oil, frying them in batches to prevent overcrowding in the pot. Fry for about 2-3 minutes, or until the coating is golden brown and crispy.

                                  - Use a slotted spoon to remove the churro bites from the oil, letting them drain briefly on paper towels.

                                    Coat with Cinnamon Sugar:

                                      - While the churro cheesecake bites are still warm, dip each one into the melted butter, then roll them in the cinnamon sugar mixture until they are evenly coated.
