1 ripe mango, peeled and diced

1 cup coconut yogurt (dairy-free option available)

1/2 cup coconut milk

2 tablespoons honey or maple syrup (adjust according to your preferred sweetness)

1 teaspoon vanilla extract

A pinch of sea salt

Fresh mint leaves for garnish (optional)

Prepare the Mango: Start by placing the diced mango into a blender. Blend the mango until it transforms into a smooth puree, pausing to scrape down the sides of the blender as needed to ensure an even consistency.

    Mix the Yogurt Base: In a medium-sized mixing bowl, combine the coconut yogurt with coconut milk, then add in the honey or maple syrup, vanilla extract, and a pinch of sea salt. Use a whisk to blend the ingredients together until the mixture is creamy and uniform.

      Layer the Mixture: Begin by pouring approximately 1 tablespoon of the yogurt mixture into the bottom of each popsicle mold. Next, add a layer of the mango puree, using about 1 tablespoon for each mold. Continue layering, alternating between the yogurt mixture and mango puree, until the molds are almost full, leaving a small gap at the top to allow for expansion during freezing.

        Insert Sticks: Carefully place the popsicle sticks into the center of each mold. Ensure that the sticks are positioned upright for even freezing.

          Freeze: Transfer the filled molds to the freezer. Allow them to freeze for at least 4-6 hours, or until they are completely solid.

            Unmold the Pops: To remove the popsicles, take the molds out of the freezer. Run warm water over the outside of each mold for a few seconds to loosen the pops. Gently pull on the sticks to release the yogurt sticks from the molds.
