Ingredients

2 medium-sized apples (preferably Granny Smith or Honeycrisp)

1 teaspoon ground cinnamon

2 tablespoons pure maple syrup

1 cup plain or vanilla Greek yogurt

1 tablespoon honey (optional for added sweetness)

1 cup granola (choose your favorite blend)

1/2 cup chopped walnuts or pecans

1 tablespoon melted coconut oil

1/4 teaspoon salt

1 teaspoon vanilla extract

Instructions

Prepare the Apples: Start by peeling and coring the apples. Cut them into small cubes. In a medium mixing bowl, toss the diced apples with ground cinnamon and maple syrup until they're evenly coated. Allow this mixture to rest for about 10 minutes so the flavors can meld beautifully.

Make the Yogurt Mixture: In another bowl, combine the Greek yogurt, honey (if you’re using it), and vanilla extract. Stir until the mixture is smooth and well blended, ensuring the honey is fully incorporated.

Create the Crumble Topping: In a separate bowl, combine the granola, chopped walnuts (or pecans), melted coconut oil, and salt. Mix thoroughly until all dry ingredients are well coated with the oil, which will help create a deliciously crunchy topping.

Assemble the Bombs: Using silicone molds or a muffin tin, begin layering the ingredients. Start by adding a generous spoonful of the yogurt mixture to the bottom of each mold. Follow this with a layer of the spiced apple mixture, and then sprinkle the crumble topping on top. Repeat these layers until the molds are full, ensuring the last layer is the crumble topping for added texture.

Freeze: Carefully place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until the yogurt bombs are completely solid.

Serve: Once frozen, gently remove the yogurt bombs from the molds. If you find them difficult to release, let them sit at room temperature for a couple of minutes to soften slightly. Serve immediately for a refreshing treat, and savor the delightful combination of flavors and textures in each bite!
