Ingredients

2 cups vanilla yogurt (Greek or regular)

1/2 cup cookie butter (speculoos spread)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup crushed graham crackers (for added crunch)

1/4 cup mini chocolate chips (optional, for sweetness)

1/4 cup chopped nuts (e.g., almonds or pecans, optional for texture)

8 popsicle molds and sticks

Instructions

Prepare the Base: In a large mixing bowl, combine the vanilla yogurt, cookie butter, honey (or maple syrup), and vanilla extract. Using a whisk, beat the mixture until it is smooth and fully blended, ensuring there are no lumps from the cookie butter.

Add Crunch: Gently fold in the crushed graham crackers along with the mini chocolate chips and chopped nuts, if you choose to include them. Use a spatula to mix carefully, ensuring that the crunchy elements are evenly incorporated without over-mixing the base.

Pour into Molds: With the help of a spoon or ladle, carefully fill each popsicle mold with the yogurt-cookie butter mixture. Be sure to leave about 1/4 inch of space at the top of each mold to allow for expansion as the popsicles freeze.

Insert Sticks: Take the popsicle sticks and press them gently into the center of each filled mold. Ensure the sticks remain upright and centered.

Freeze: Place the filled molds in the freezer. Allow them to freeze for a minimum of 4-6 hours or until they are completely solid. For optimal texture, consider freezing them overnight.

Unmold Pops: When you are ready to enjoy your homemade pops, run the molds under warm water for a few seconds. This will help loosen the pops. Then, carefully pull each pop out of its mold, taking care not to break them.

Serve: Enjoy your tasty frozen treats immediately for the full flavor experience! Alternatively, you can wrap each pop in plastic wrap for later enjoyment and store them in an airtight container in the freezer for up to 2 weeks.
