Ingredients
  

2 cups unsweetened Greek yogurt

1 cup shelled pistachios (lightly toasted, if desired)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

3/4 cup rolled oats

1/4 cup unsweetened shredded coconut

Optional: 1/4 cup dark chocolate chips or cacao nibs for an extra treat

Instructions
 

Prep Ingredients: Begin by toasting the pistachios. Place them in a dry skillet over medium heat, stirring occasionally for about 3-4 minutes until they're fragrant and golden. Remove from heat and let them cool, then chop them roughly into small pieces.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pistachios, shredded coconut, and salt. Use a spatula or wooden spoon to stir the mixture well, ensuring that all dry ingredients are evenly distributed.

      Combine Yogurt Mixture: In a separate medium-sized bowl, add the Greek yogurt. Pour in the honey (or maple syrup) and the vanilla extract. Whisk together until the mixture is smooth and fully blended.

        Combine Mixtures: Gradually pour the yogurt mixture into the bowl of dry ingredients. Gently fold the mixtures together using a spatula until everything is thoroughly incorporated. If you're using dark chocolate chips or cacao nibs, gently fold them in at this stage.

          Form Rounds: Take a small amount of the mixture (approximately one tablespoon) and roll it into a ball between your palms. Place each ball on a parchment-lined baking sheet, making sure to leave a little space between each round to allow for even freezing.

            Freeze: Once all the rounds are shaped, transfer the baking sheet to the freezer. Allow them to freeze for about 2-3 hours or until they're firm and solid.
