1 teaspoon pure vanilla extract

A pinch of sea salt

Cooking spray or a silicone muffin tray (to ensure easy release)

Prepare the Raspberry Mixture: In a blender, combine the fresh raspberries, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Blend until smooth for a creamy consistency, or pulse a few times if you prefer some raspberry chunks for added texture.

    Create the Yogurt Base: In a medium-sized mixing bowl, combine the Greek yogurt with the blended raspberry mixture. Gently stir until thoroughly mixed, making sure to keep some visible swirls of raspberry for an appealing look.

      Incorporate the Nuts: Gently fold the roughly chopped mixed nuts into the yogurt and raspberry mixture. Ensure the nuts are evenly distributed throughout the mixture without overmixing.

        Mold the Bites: Lightly coat a silicone muffin tray or mini muffin tray with cooking spray to facilitate easy removal. Spoon the yogurt mixture into the molds, filling each cup about three-quarters full to allow for expansion as they freeze.

          Freeze Until Firm: Place the filled tray in the freezer for a minimum of 4 hours, or until the bites are completely set and frozen solid.

            Release and Serve: Once frozen, gently pop the bites out of the tray. If you are using a silicone mold, run warm water over the outside of the mold to help release the bites easily.
