Prep the Zucchini: Begin by placing the grated zucchini into a clean kitchen towel or cheesecloth. Sprinkle the zucchini with 1 teaspoon of salt and let it rest for 10-15 minutes. This step is essential as it allows the salt to draw out excess moisture, ensuring your fritters will be crispy. After the resting period, twist the towel or cloth tightly to squeeze out as much liquid from the zucchini as possible.

    Mix Ingredients: In a sizable mixing bowl, combine the now-drained zucchini with the all-purpose flour, freshly grated Parmesan cheese, eggs, chopped parsley, minced garlic, black pepper, onion powder, and cayenne pepper if desired.
