2 medium zucchinis

1 cup all-purpose flour

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

1 large egg

1 cup breadcrumbs (preferably panko for an extra crunchy texture)

½ cup grated Parmesan cheese (optional for enhanced flavor)

Vegetable oil (for frying)

Prepare the Zucchini: Begin by washing the zucchinis thoroughly. Slice them into thin rounds, approximately ¼ inch thick. Arrange the zucchini slices on a paper towel, then generously sprinkle salt over them. Allow the slices to rest for about 15 minutes; this step will help draw out excess moisture. Afterward, use a clean paper towel to pat them dry, removing any accumulated moisture.

    Set Up Breading Station: Create a breading station by preparing three shallow bowls. In the first bowl, mix together the all-purpose flour, salt, black pepper, garlic powder, and onion powder. In the second bowl, crack the egg and whisk it until it's well beaten. In the third bowl, combine the breadcrumbs and grated Parmesan cheese, if you’re using it.

      Bread the Zucchini: Take one zucchini slice and coat it in the flour mixture, ensuring to shake off any excess flour. Next, dip the floured slice into the beaten egg, allowing any surplus to drip off. Finally, press the slice into the breadcrumb mixture, ensuring it is evenly coated. Repeat this breading process for each zucchini slice until all are coated.

        Heat the Oil: In a large skillet or frying pan, pour in enough vegetable oil to create a layer about half an inch deep. Warm the oil over medium-high heat until it shimmers, ideally reaching a temperature of around 350°F (175°C) for optimal frying.

          Fry the Chips: Carefully place the breaded zucchini slices into the hot oil in batches, making sure not to overcrowd the pan. Fry the slices for approximately 2-3 minutes on each side, or until they turn a beautiful golden brown and become crispy. Use a slotted spoon to remove the fried chips and place them on a plate lined with paper towels to absorb any excess oil.
