Ingredients

1 head of romaine lettuce (or use butter lettuce for a sweeter flavor)

1 cup cherry tomatoes, halved

1 cucumber, diced into small cubes

1 cup Kalamata olives, pitted and halved

1/2 red onion, finely sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground pepper, to taste

Instructions

Prepare the Lettuce Wraps: Carefully detach the leaves of the romaine lettuce, ensuring each leaf remains whole. Rinse them gently under cool water to cleanse, and then pat them dry with a soft paper towel. Set the prepared leaves aside for assembly.

Mix the Salad Ingredients: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, halved Kalamata olives, and finely sliced red onion. Stir gently to ensure even distribution of the ingredients.

Add Cheese and Herbs: Sprinkle the crumbled feta cheese and finely chopped parsley over the vegetable mixture in the bowl. This will enhance the flavor profile and add a fresh touch.

Prepare the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, and a touch of salt and freshly ground pepper. Taste the dressing and adjust the seasoning as desired, ensuring it complements the salad well.

Combine Ingredients: Drizzle the prepared dressing over the salad mixture in the large bowl. Using a gentle folding motion, toss all the ingredients together until everything is nicely coated in the dressing.

Assemble the Wraps: Take one lettuce leaf and scoop a generous spoonful of the Greek salad mixture into the center.

Serve: Fold the sides of the lettuce leaf over the filling to create a wrap. Enjoy immediately! Repeat this process with the remaining lettuce leaves and filling.
