Grilled Peach & Arugula Salad

Ingredients
  

4 ripe peaches, halved and pitted

4 cups fresh arugula, thoroughly washed and dried

1 cup crumbled feta cheese

1/2 cup walnuts, toasted and roughly chopped

1/4 cup balsamic glaze

2 tablespoons extra-virgin olive oil

1 tablespoon honey

Salt and freshly cracked black pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Grill:

    Begin by heating your grill to medium-high heat, ensuring it’s hot enough to create beautiful grill marks on the peaches.

      Prepare the Peaches:

        Lightly brush the cut sides of each peach half with extra-virgin olive oil to enhance their flavor and prevent sticking. Season them with a pinch of salt to taste.

          Grill the Peaches:

            Carefully place the peach halves, cut-side down, onto the grill. Grill for about 4-5 minutes until you see lovely grill marks and the peaches become slightly tender. Flip the peaches over and continue grilling for an additional 2-3 minutes until they are warmed through. After grilling, remove them from the grill and set aside to cool slightly.

              Make the Dressing:

                In a small mixing bowl, combine the remaining extra-virgin olive oil and honey. Add a pinch of salt and a few cracks of black pepper. Whisk the mixture until it’s well-emulsified and smooth.

                  Assemble the Salad:
