1 (3-4 lb) bone-in, skin-on turkey breast

1/2 cup unsalted butter, softened to room temperature

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh sage, finely chopped

Zest of 1 lemon

Juice from 1 lemon

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 cup low-sodium chicken broth

1 large onion, quartered

2 carrots, diced

2 celery stalks, diced

Preheat the Oven: Begin by preheating your oven to 350°F (175°C), ensuring it’s hot and ready for the turkey.

    Prepare the Herb Butter: In a medium mixing bowl, blend the softened butter with the minced garlic, chopped rosemary, thyme, sage, lemon zest, lemon juice, salt, and black pepper. Stir well until the mixture is smooth and all herbs and spices are thoroughly incorporated.

      Prepare the Turkey Breast: Pat the turkey breast dry using paper towels to ensure a crisp skin. Gently insert your fingers underneath the skin, loosening it from the meat to create a pocket for the herb butter.

        Spread the Herb Butter: With half of the prepared herb butter, carefully spread it under the loosened skin, ensuring an even coating on the meat. Use the remaining herb butter to generously cover the skin of the turkey breast for a flavorful exterior.

          Prepare the Roasting Pan: In a large roasting pan, lay down the quartered onion, diced carrots, and diced celery. These vegetables will add aroma and flavor to the drippings during roasting.

            Place the Turkey in the Pan: Set the turkey breast, skin-side up, atop the bed of vegetables in the roasting pan. Pour the chicken broth into the bottom of the pan to help keep the turkey juicy throughout the cooking process.
