1 large head of cauliflower, cut into florets

1 head of garlic (approximately 10 cloves), roasted

2 tablespoons olive oil

2 tablespoons unsalted butter (or a dairy-free substitute)

1/4 cup sour cream (or replace with Greek yogurt for an extra tang)

1/4 cup freshly grated Parmesan cheese (optional, for added richness)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried rosemary)

Salt and pepper, to taste

Chives or parsley, finely chopped, for garnish

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C). Take the head of garlic and slice off the top to expose the individual cloves. Drizzle a small amount of olive oil over the exposed cloves and wrap the head of garlic tightly in aluminum foil.

      - Place the wrapped garlic in the oven and roast for 30-35 minutes, until the cloves are tender and caramelized. Once roasted, remove it from the oven and let it cool slightly. Squeeze the soft garlic cloves out from their skins into a bowl.

        Cook the Cauliflower:

          - Meanwhile, bring a large pot of salted water to a boil. Add in the cauliflower florets and cook for about 10-12 minutes, or until fork-tender. After cooking, drain the cauliflower well in a colander.

            Mash the Cauliflower:
