1 pound large shrimp, peeled and deveined

4 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup freshly squeezed lemon juice (approximately 2 lemons)

1 tablespoon lemon zest, plus extra for garnish

1 teaspoon red pepper flakes (adjust to your spice preference)

3 tablespoons olive oil, divided

Salt and fresh black pepper, to taste

2 tablespoons fresh parsley, finely chopped for garnish

Prepare the Zucchini Noodles: Using a spiralizer or a julienne peeler, transform the zucchinis into pasta-like noodles. Place the noodles in a colander, sprinkle lightly with salt, and let them rest to draw out excess moisture. This will help prevent sogginess.

    Season the Shrimp: In a medium-sized mixing bowl, sprinkle the shrimp with salt, black pepper, and red pepper flakes. Toss gently to ensure each shrimp is evenly coated with the spices for maximum flavor.

      Cook the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the shrimp to the skillet in a single layer.
