1 pound large shrimp, peeled and deveined

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest of 1 large lemon

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

1/4 cup honey

1 tablespoon low-sodium soy sauce

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Marinade: In a medium mixing bowl, whisk together the lemon zest, freshly squeezed lemon juice, honey, soy sauce, olive oil, minced garlic, red pepper flakes, as well as a pinch of salt and black pepper until the mixture is well combined and the honey is dissolved.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the bowl with the marinade. Gently toss to ensure that each shrimp is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for 15 to 30 minutes, allowing the flavors to meld and infuse into the shrimp.

      Cook the Shrimp: Preheat a large skillet over medium-high heat. Once the skillet is hot, pour in the marinated shrimp along with all of the marinade. Cook the shrimp for about 2-3 minutes on one side until they start to turn a lovely pink color. Carefully flip each shrimp and continue cooking for an additional 2 minutes, or until they are fully cooked and glossy. Be cautious not to overcook the shrimp to avoid a rubbery texture.

        Reduce the Glaze: If you prefer a thicker glaze for your shrimp, remove the cooked shrimp from the skillet and set them aside. Allow the remaining marinade to simmer for another 2-3 minutes until it thickens and becomes syrupy in consistency.
