Ingredients

4 (6 oz) salmon fillets, skin-on

2 tablespoons olive oil

3 tablespoons fresh lemon juice (about 1 large lemon)

Zest of 1 lemon

2 cloves garlic, finely minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

Lemon slices, for garnish

Additional fresh herbs, for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To ensure easy cleanup, line a baking sheet with parchment paper.

Create the Marinade: In a small mixing bowl, vigorously whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, chopped dill, parsley, thyme, salt, and black pepper until the mixture is well blended and aromatic.

Prepare the Salmon: Arrange the salmon fillets on the prepared baking sheet with the skin side facing downwards. Use paper towels to gently pat them dry, which helps achieve a nice sear during cooking.

Marinate the Fillets: Generously drizzle the zesty lemon herb marinade over each salmon fillet, ensuring that they are thoroughly coated. Allow the fillets to marinate for about 15 minutes at room temperature to enhance the flavor infusion.

Roast the Salmon: Place the baking sheet in the preheated oven. Roast the salmon for approximately 12-15 minutes, or until it easily flakes with a fork and reaches your desired level of doneness. The edges should have a slight crispness that adds texture.

Garnish and Serve: Once cooked, carefully remove the salmon from the oven. Garnish your beautifully roasted fillets with fresh lemon slices and additional herbs to elevate the presentation. Serve hot alongside your favorite accompaniments, such as roasted vegetables or a refreshing salad.

Enjoy Your Meal: Plate the succulent salmon, drizzling any residual marinade over the top for extra flavor, and enjoy every bite!
