1 lb (450g) large shrimp, peeled and deveined

2 ripe mangoes, diced into bite-sized pieces

2 cups mixed salad greens (a mix of arugula, spinach, and romaine)

1 ripe avocado, diced

1 small red onion, thinly sliced

1 bell pepper (red or yellow), diced

1 cucumber, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons extra virgin olive oil

1 teaspoon honey (or agave syrup for a vegan option)

Salt and freshly cracked pepper to taste

Optional: 1 jalapeño, finely chopped for an extra kick

Prepare the Shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the shrimp with salt, pepper, and half of the lime juice.
