Mini Veggie Lasagna Biscuit Bombs

Ingredients
  

1 can (8 oz) refrigerated biscuit dough (flaky or buttermilk)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)

1/2 cup zucchini, finely diced

1/2 cup bell pepper, finely diced (any color)

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 cup marinara sauce (plus extra for serving)

Salt and pepper, to taste

Olive oil spray (or extra virgin olive oil)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C). While it's heating, line a baking sheet with parchment paper for easy cleanup.

    Prepare the Filling: In a medium mixing bowl, combine the ricotta cheese, 1/2 cup of shredded mozzarella, grated Parmesan, chopped spinach, diced zucchini, diced bell pepper, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well until all ingredients are fully incorporated and the filling is smooth.

      Prepare the Biscuits: Carefully open the can of biscuit dough and separate each biscuit. Using your hands or a rolling pin, flatten each biscuit into a disc approximately 4 inches in diameter.

        Assemble the Bombs: Place about 2 tablespoons of the prepared veggie filling in the center of each flattened biscuit. Drizzle approximately 1 teaspoon of marinara sauce over the filling. Gently fold the edges of the biscuit up over the filling, pinching the seams to completely seal the bombs. Make sure the seam side is facing down when placing them on the prepared baking sheet. Repeat the process until all biscuits and filling are used.

          Add Olive Oil: Lightly spray or brush the tops of each filled biscuit bomb with olive oil. This will aid in achieving a lovely golden-brown color as they bake.

            Bake the Biscuit Bombs: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the biscuit bombs are puffed up and golden brown.

              Garnish & Serve: After baking, remove the biscuit bombs from the oven and allow them to cool for a few minutes. Serve warm with additional marinara sauce on the side for dipping.
