1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup uncooked elbow macaroni

2 cups beef broth

1 can (15 oz) diced tomatoes, undrained

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon Italian seasoning

2 cups shredded cheddar cheese

Salt and pepper to taste

2 tablespoons olive oil

Instructions
 

In a large skillet, warm the olive oil over medium heat. Incorporate the chopped onion and sauté until it becomes translucent, approximately 3-4 minutes.

    Introduce the minced garlic and sauté for an additional minute until it releases its aroma.

      Add the ground beef, breaking it apart with a spatula. Cook until it turns brown and is no longer pink, around 5-7 minutes. Season with salt, pepper, and Italian seasoning.

        Pour in the uncooked elbow macaroni, beef broth, diced tomatoes (including their juices), and the frozen mixed vegetables. Stir to evenly mix all ingredients.

          Bring the mixture to a boil, then cover the skillet and lower the heat to a simmer. Let it simmer for about 12-15 minutes, or until the pasta is soft and the bulk of the liquid has been absorbed.

            Take off the lid and evenly distribute the shredded cheddar cheese on top. Cover again and allow it to sit for another 2-3 minutes until the cheese has melted and is bubbling.

              After the cheese has melted, remove from heat and let it cool slightly before serving. Optionally, garnish with fresh herbs.
