2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup cherry tomatoes, halved

8 ounces uncooked pasta (penne or fusilli work well)

2 cups chicken broth (low-sodium if preferred)

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup baby spinach

1/2 cup freshly grated Parmesan cheese

Salt and pepper, to taste

Sauté the Chicken: In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Season the bite-sized chicken pieces generously with salt and pepper. Add the chicken to the pan in a single layer and cook for about 5-7 minutes, or until browned and cooked through. Once done, remove the chicken from the pan and set it aside on a plate.
