4 large eggs

1/2 cup egg whites

1/2 cup fresh spinach, chopped

1/4 cup bell pepper, diced (choose your favorite color)

1/4 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup shredded cheese (cheddar or feta for a twist)

4 whole-grain or spinach wraps

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: Slices of avocado, salsa, or a splash of hot sauce

Instructions
 

Prep the Veggies: Start by washing the spinach, bell pepper, cherry tomatoes, and red onion. Chop the spinach and bell pepper, halve the cherry tomatoes, and finely chop the red onion. Set all the prepped veggies aside in a bowl.

    Cook the Veggies: Heat the olive oil in a large non-stick skillet over medium heat. Once hot, add the chopped red onion and diced bell pepper. Sauté these for about 2-3 minutes, stirring occasionally, until they begin to soften. Next, add in the chopped spinach and halved cherry tomatoes. Cook for another 2 minutes or until the spinach is wilted and the tomatoes are slightly tender. Season the mixture with salt and pepper to enhance the flavors. Once cooked, remove the veggie mixture from the skillet and set aside.

      Scramble the Eggs: In a medium mixing bowl, whisk together the whole eggs and egg whites until they are thoroughly combined and frothy. Pour this mixture into the same skillet over medium heat. Allow it to sit undisturbed for about 30 seconds, then gently stir with a spatula. Cook the eggs until they are just set but still creamy, which should take about 3-4 minutes.

        Combine Ingredients: Once the eggs are fluffy, return the sautéed veggie mixture to the skillet and sprinkle in the shredded cheese. Carefully fold the ingredients together gently using the spatula, allowing the cheese to melt and unite with the eggs and veggies. Cook everything together for about an additional minute.

          Assemble the Wraps: To prepare the wraps, warm each whole-grain or spinach wrap in a dry skillet for approximately 30 seconds on each side or until soft and pliable. Spoon an equal portion of the egg and veggie mixture onto each wrap, leaving about an inch of space around the edges for easy wrapping.

            Wrap It Up: To create a secure wrap, fold the sides of each wrap inward, then roll it tightly from the bottom edge upwards to enclose the filling completely.

              Serve: If desired, slice each wrap in half diagonally for a beautiful presentation. Serve warm, accompanied by your choice of optional toppings like fresh avocado slices, a dollop of salsa, or a spicy kick of hot sauce.
