Ingredients

1 pound boneless, skinless chicken breasts

1 cup BBQ sauce (your choice of flavor)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

4 flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1 cup coleslaw mix (cabbage & carrots)

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Fresh cilantro or parsley, for garnish (optional)

Instructions

Prepare the Chicken:

In a large skillet, heat the olive oil over medium heat. Pat the chicken breasts dry, then season generously with smoked paprika, garlic powder, salt, and pepper. When the oil is hot, add the chicken to the skillet. Sear for about 5-6 minutes on each side, or until the chicken is golden brown and fully cooked (the internal temperature should reach 165°F).

      Shred the Chicken:

Once cooked, carefully transfer the chicken breasts to a large bowl. Using two forks, shred the chicken into bite-sized pieces. Pour in the BBQ sauce and stir until the chicken is evenly coated with the sauce. Set aside.

          Preheat the Oven:

Preheat your oven to 400°F (200°C) to prepare for baking.

              Assemble the Flatbreads:

On a baking sheet, arrange the flatbreads in a single layer. Using a spoon, evenly distribute the pulled BBQ chicken mixture over each flatbread. Top each one with a generous sprinkle of shredded mozzarella cheese.

                  Bake:

Place the baking sheet in the preheated oven and bake for 10-12 minutes. Keep an eye on them until the cheese is completely melted and bubbly, creating a deliciously gooey topping.

                      Make the Coleslaw:

In a medium bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, honey, and a pinch of salt and pepper. Toss the mixture thoroughly until the coleslaw is well-coated and vibrant.

                          Serve:

After baking, remove the flatbreads from the oven. Top each one with a generous scoop of coleslaw, allowing the cool crunch to balance the warm, smoky flavors of the chicken. Garnish with freshly chopped cilantro or parsley, if desired. Slice into pieces and serve warm.

                              Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4
