Quick and Healthy Veggie Quesadilla with a Cheesy Comfort Kick

Ingredients
  

4 whole wheat tortillas

1 cup shredded cheese (cheddar or Monterey Jack)

1 cup fresh spinach, chopped

1 cup bell peppers, diced (any color)

1 cup mushrooms, sliced

1 small onion, chopped

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Optional: salsa and guacamole for serving

Instructions
 

In a large frying pan, warm the olive oil over medium heat. Introduce the diced onion and minced garlic, cooking for roughly 2-3 minutes until the onion turns translucent.

    Incorporate the bell peppers and mushrooms into the frying pan. Continue to cook for an additional 5 minutes, stirring occasionally, until the vegetables become tender.

      Mix in the chopped spinach, chili powder, cumin, salt, and pepper. Cook for another 2 minutes, just until the spinach begins to wilt. Remove the frying pan from the heat.

        Clean the frying pan and place it back on the stove over medium heat. Lay one tortilla in the frying pan.

          Distribute half of the shredded cheese evenly over the tortilla, then layer half of the vegetable mixture on top. Sprinkle the remaining cheese before adding another tortilla on top.

            Cook for approximately 3-4 minutes, or until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla with a spatula, and cook for an additional 3-4 minutes on the opposite side until it is golden and crispy.

              Take it off the frying pan and allow it to cool for a minute before slicing into wedges.

                Serve alongside salsa and guacamole, if desired. Enjoy!
