1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp cayenne pepper (or to taste)

Salt and freshly ground black pepper to taste

2 tbsp olive oil

1 cup beef broth (or water)

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions
 

Heat the Oil: In a large, heavy-bottomed pot, heat the olive oil over medium heat until shimmering.

    Sauté the Vegetables: Add the diced onion and red bell pepper to the pot. Sauté for about 3-4 minutes, stirring occasionally, until the vegetables soften and the onion turns translucent.

      Brown the Beef: Increase the heat to medium-high and add the ground beef to the pot. Cook until it’s well browned, using a spoon to break it apart, approximately 5-6 minutes. If there’s excess fat, drain it carefully.

        Add the Garlic: Mix in the minced garlic and sauté for an additional minute, stirring constantly, until fragrant.

          Season and Simmer: Sprinkle the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper over the mixture. Stir well to combine all the spices evenly. Next, add the diced tomatoes (with their juices), kidney beans, black beans, and beef broth. Bring the concoction to a lively simmer.

            Let It Cook: Lower the heat to medium-low and allow the chili to simmer gently for 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.

              Taste and Adjust the Seasoning: Take a moment to taste your chili. Adjust the flavor by adding more seasoning, if desired. You can increase the heat with additional cayenne pepper or chili powder for a spicier kick.
