8 oz penne pasta

1 lb ground turkey

1 small onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning

1 (15 oz) can diced tomatoes, with juices

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese (divided)

1 cup salsa (adjust spice level to taste)

½ cup sour cream (plus more for serving)

2 green onions, finely sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Olive oil (for sautéing)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente. Drain well and set aside.

    Sauté the Onion and Garlic: In a large skillet, heat a generous drizzle of olive oil over medium heat. Add the finely diced onion and sauté for 2-3 minutes until softened and translucent. Stir in the minced garlic and sauté for an additional minute, being careful not to burn the garlic.

      Brown the Ground Turkey: Increase the heat slightly and add the ground turkey to the skillet. Use a spatula to break it apart. Cook the turkey until it is thoroughly browned and no longer pink, which should take about 5-7 minutes. Make sure to stir occasionally for even cooking.

        Season and Combine Ingredients: Sprinkle the taco seasoning over the browned turkey. Add the can of diced tomatoes (including all juices), corn, and black beans to the skillet. Stir to combine all ingredients and let the mixture simmer for 3-5 minutes, allowing the flavors to meld together.

          Mix with Pasta: In a large mixing bowl, combine the cooked penne pasta, turkey and vegetable mixture, salsa, and half of the shredded cheddar cheese. Gently fold the ingredients together until the pasta is well coated.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with olive oil. Transfer the pasta mixture into the dish, spreading it out evenly.

              Bake: Evenly sprinkle the remaining cheddar cheese over the top of the pasta bake. Place the dish in the preheated oven and bake for 20-25 minutes or until the cheese is bubbly and golden brown.
