1/2 cup finely shredded carrots

1/2 cup red bell pepper, finely chopped

1/2 cup cucumber, finely diced

1/2 cup yellow bell pepper, finely chopped

1/2 cup purple cabbage, thinly sliced

1/4 cup fresh spinach leaves

1/4 cup fresh herbs (such as parsley or cilantro), chopped

Salt and pepper to taste

Prepare Your Veggies: Start by thoroughly washing all the vegetables under cool running water. If desired, peel the carrots and finely shred them using a box grater. Dice the cucumber and finely chop both the red and yellow bell peppers. For the purple cabbage, slice it as thinly as possible to create delicate ribbons.

    Make the Cream Cheese Spread: In a medium-sized mixing bowl, combine the softened cream cheese with a pinch of salt and pepper. For an extra splash of flavor, mix in the optional hummus until everything is well blended and creamy.

      Assemble the Pinwheels: Lay one tortilla flat on a clean, dry surface. Take a generous scoop of the cream cheese mixture and spread it evenly across the tortilla, leaving about a half-inch border around the edges.

        Layer the Veggies: At the bottom of the tortilla, place a layer of fresh spinach leaves. Following that, artfully arrange the shredded carrots, red bell pepper, yellow bell pepper, diced cucumber, and purple cabbage in colorful strips for a vibrant look.
