Roasted Garlic Mashed Cauliflower

1 large head of cauliflower, cut into small florets

1 whole head of garlic

3 tablespoons olive oil

1/4 cup unsalted butter (or vegan butter for a dairy-free option)

1/2 cup heavy cream (or unsweetened almond milk for a lighter, dairy-free version)

Salt and pepper, to taste

Fresh chives or parsley, finely chopped (for garnish, optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Take the whole head of garlic, peel off any loose outer layers, and place it on a square of aluminum foil. Drizzle with 1 tablespoon of olive oil, then wrap the foil tightly around the garlic to seal in the flavors. Set it aside.

      On a large baking sheet, spread out the cauliflower florets. Drizzle with 2 tablespoons of olive oil, then sprinkle generously with salt and pepper. Toss the florets with your hands or a spatula until they are well-coated with the oil and seasonings.

        Place the wrapped garlic and the baking sheet with the seasoned cauliflower into the preheated oven. Roast for 25-30 minutes, or until the cauliflower is tender and a fork can easily pierce it, and the garlic is soft and caramelized.

          Once roasted, carefully remove the baking sheet and the foil packet of garlic from the oven. Allow the garlic to cool for a few minutes, then gently squeeze the cloves out into a mixing bowl, discarding the skins.

            Add the roasted cauliflower florets to the bowl with the garlic. Pour in the heavy cream (or almond milk) and add the butter. Using a potato masher or hand mixer, combine the ingredients until you achieve your desired texture—smooth and creamy or slightly chunky, based on your preference.

              Taste the mashed mixture and season with additional salt and pepper as needed. Mix well to ensure all flavors are blended together.

                Transfer the mashed cauliflower to a warm serving bowl. If desired, top with freshly chopped chives or parsley for a pop of color and flavor. Serve warm and enjoy!
