4 large eggs

1 cup fresh spinach, roughly chopped

1 medium bell pepper, diced (your choice of color)

1 small zucchini, grated

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled (optional)

1 teaspoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 whole wheat tortillas

Fresh avocado slices, for serving (optional)

Salsa or hot sauce, for serving (optional)

Instructions
 

Prepare the Veggies:

    - In a non-stick skillet, heat 1 teaspoon of olive oil over medium heat.

      - Add the diced bell pepper, finely chopped red onion, and grated zucchini to the skillet. Sauté these vegetables for about 3-4 minutes until they begin to soften.

        - Stir in the chopped spinach and halved cherry tomatoes, cooking for an additional 2 minutes, or until the spinach has wilted down.

          - Once the veggies are cooked, sprinkle in the garlic powder, smoked paprika, salt, and pepper. Mix well to combine all flavors and then remove the skillet from the heat.

            Scramble the Eggs:

              - In a medium bowl, whisk the 4 eggs until they are fully combined. Season the eggs with a pinch of salt and pepper to taste.

                - In the same skillet (clean it if needed for better results), pour the beaten eggs and cook them over low heat. Stir gently with a spatula, allowing the eggs to cook slowly until they’re just soft and still slightly runny. Remove from heat as soon as they reach this consistency.
