Ingredients

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon garlic powder

2 tablespoons extra virgin olive oil

8 ounces cremini or button mushrooms, cleaned and sliced

1 cup Marsala wine

1 cup low-sodium chicken broth

3 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped (for garnish)

1/2 teaspoon dried thyme

1 tablespoon unsalted butter

Instructions

Preparation of Chicken:

    - Begin by patting the chicken breasts dry using paper towels. This will help achieve a nice sear. Season both sides generously with salt, black pepper, and garlic powder, ensuring even coverage.

      Searing the Chicken:

        - Heat the olive oil in a large skillet over medium-high heat until shimmering. Carefully add the seasoned chicken breasts to the skillet.

          - Sear the chicken for approximately 5-6 minutes on each side, or until they achieve a golden brown exterior and are cooked through (internal temperature should reach 165°F). Once done, remove the chicken from the skillet and set aside on a plate.

            Cooking the Mushrooms:

              - In the same skillet, without cleaning it, add the sliced mushrooms. Sauté them for about 4-5 minutes or until they begin to soften and release their moisture.

                - Add the minced garlic and dried thyme to the mushrooms, cooking for an additional minute until the garlic becomes fragrant.

                  Creating the Sauce:

                    - Pour in the Marsala wine, using a wooden spoon to scrape the browned bits from the bottom of the pan (this adds depth of flavor). Allow the wine to simmer for roughly 5 minutes, reducing slightly.

                      - Next, introduce the chicken broth and bring the mixture to a gentle simmer, allowing the flavors to meld.

                        Finishing Touches:

                          - Return the seared chicken breasts back to the skillet, nestling them within the sauce. Let them simmer together for an additional 5-7 minutes so the chicken can absorb the flavors of the sauce.

                            - Finally, stir in the butter until melted to create a silky sauce, and adjust the seasoning with more salt and pepper if desired.

                              Garnishing and Serving:

                                - Once cooked, remove the skillet from heat and garnish the dish with freshly chopped parsley for a vibrant touch. This delightful chicken marsala pairs wonderfully with garlic mashed potatoes or a creamy polenta for a satisfying meal.
