1 cup shredded cheddar cheese, divided

1/2 cup diced onions

1/2 cup cooked and crumbled turkey bacon or sausage (optional)

2 tablespoons olive oil, divided

Fresh herbs (such as chives or cilantro), chopped (optional)

Salsa or hot sauce for serving (optional)
